Mushroom soup inspiration

(for 2-3 persons or a very-very hungry 1)

  • 1 potato
  • 1 onion
  • 250 gr small white mushrooms from AH
  • A spoon of butter
  • A spoon of flour
  • 1 cup of milk
  • 1 cup of water
  • Half cup of wine [whatever's left from last night's party ;)]
  • 1 egg
  • 1-2 spoons of mayonnaise
  • Fresh dille
  • Salt
  • Pepper

 

Cut potato, onion and mashrooms in small pieces. Melt the butter in a pan. Add the veggies. Mix. Close with a lid and let ‘em fry/boil for 3′-5′. Add flour. Mix. Add milk. Mix. Add water. Mix. Close with the lid and let it boil for 5′-10′. Add wine. Mix. Let it boil for 3′.

In a cup, mix salt, pepper, egg and mayo. Switch off the fire. Add the mayo-egg mixture in the pan. Close with lid and let it cool down for 5′.

Serve with freshly cut dill on top of each plate of soup. Goes well with crouton.
